<p><strong><em>Q: Why did you choose Pani Puri as the hero of your new international project?</em></strong><br><strong>A:</strong> Because it’s more than just Indian street food. Pani Puri is a perfect canvas—its shape and texture are ideal for telling culinary stories across the world. It allows me to blend cultures, innovate flavors, and respect traditions all at once.</p>



<p><strong><em>Q: What’s your vision with <a href="https://www.vidhyafoods.com/" target="_blank" rel="noopener">VIDHYA FOODS</a>?</em></strong><br><strong>A:</strong> I want to bring these amazing products beyond the Indian community and make them resonate globally. My goal is to take authentic Indian ingredients and transform them into creative culinary experiences that anyone can connect with—from North America to Latin America to Europe.</p>



<p style="margin-top:0;margin-bottom:var(--wp--preset--spacing--80)"><strong><em>Q: What are your first steps in this collaboration?</em></strong><br>A: We’ll start with a global tour—Miami, Toronto, Mexico City, Medellín, and Ibiza. I’ll host private dinners, interviews, cooking shows, and experiences with local chefs, influencers, and culinary schools. Each city will become a chapter in our story, documented in high-quality photo, video, and short documentaries for TikTok, Instagram, YouTube, and major press.</p>

<p><strong><em>Q: Are you planning a book or editorial project?</em></strong><br><strong>A</strong>: Absolutely. I’m creating a digital and print cookbook with fusion recipes based on Pani Puri. Each one tells the story of a place and its flavors. It’s not just about food—it’s about connection, inspiration, and culture.</p>

The plate he created was made of solid gold, which also included 84 diamonds and received one million Euros from Arab Prince in 2013, while the plate was breathtaking, the recipes he used were the piece de resistance.</p>

He then moved his culinary talents to South Beach where’s been crafting dishes for Miami’s rich and famous and everyone else in between. Miami Heat athletes have now become regulars of his steakhouse but it took a while for this political science major to get cooking.</p>

<p style="padding-top:var(--wp--preset--spacing--70)"><strong>Where are you from? What brought you to the culinary industry?</strong></p>



<p style="padding-bottom:var(--wp--preset--spacing--70)">I was born in New York City and both sides of my family are first generation, my father’s family came from Switzerland and my mother’s side is full of Italian from Sicily. So, food was an integral part of my life early on. Having become a chef, I’ve come a long way since I was in high school and getting ready for college. At that time, culinary arts were seen as a trade not as a career. I went to college and then grad school and studied political science before realizing that following my true passion meant becoming a chef and a restauranteur. My father told me that he thought that I would do well in this career when I was younger but the path hadn’t been clear. One day I was in Washington D.C. looking for a job and stuck my head in a culinary school. The chef told me he had one spot left in the next class and it was mine if I wanted it. I went home packed up and moved and I haven’t looked back since.</p>

<p style="padding-bottom:var(--wp--preset--spacing--70)">Inspiration for the dishes I create is a strange and wonderful occurrence. I can be inspired by anything starting from another chef’s work to a memory from my childhood or simply the beauty of an ingredient at its peak.</p>

<p style="padding-bottom:var(--wp--preset--spacing--70)">RED is such a special and unique place to dine and eat due to the fact that we do not compromise on the quality of the food. We use only the finest and freshest ingredients and showcase them so that the guest can experience them as Mother Nature intended. When that local heirloom tomato is perfectly ripe and gets served to the guest and it becomes the best tomato that they have ever eaten, that is where RED elevates itself above its rivals. We strive for that perfect moment in time for each item on our menu, to catch it at its peak moment!</p>

<p style="padding-bottom:var(--wp--preset--spacing--70)">RED is forever evolving so the future is bright and open for RED as a concept and for me as the chef driving it. We are always discussing using the RED idea of food at its finest and how it might apply to other concepts or the chance to open up more locations in the future. Running a restaurant such as RED is always a challenge but one I happily accept each and every day.</p>

<p style="padding-bottom:var(--wp--preset--spacing--70)">If I’m cooking for guests at the restaurant, I’ll usually suggest that they indulge in whatever ingredient is in the kitchen at that moment that’s at its peak of flavor and deliciousness. Right now, it might be the Black Perigord Truffles shaved over fresh pasta. Food is constantly being shipped in from all over the planet and I want the guest to have the experience of that one item in the kitchen that just screams flavor, taste and perfection. At home, I do little cooking but if you were to catch me cooking at home I do make a mighty fine brunch when the muse strikes me.</p>

<p style="padding-top:var(--wp--preset--spacing--70);padding-bottom:var(--wp--preset--spacing--70)">Before studying gastronomy, Gómez de la Fuente was working as a seafood marketer and this is how his passion for cuisine manifested: “I studied almost four years in Mexico and then I went to Barcelona to study at Hugman University. I came to Miami, looking for luck and I worked with NOBU for a year. Then, I went to open NOBU Mexico. After, I joined the “Sinbersol” group, for which I am still currently involved. Sinbersol is a very important group in Mexico and it has more than 25 restaurants. This restaurant is called number 20 because it’s the twentieth restaurant in the group. We chose a canteen because they’ve always been very famous in Mexico. They’re tradition.”</p>

<p style="padding-bottom:var(--wp--preset--spacing--70)">“A canteen is a place where you eat and drink, that’s it. An informal place, somewhere you can go to drink and relax, where you can be at ease.” Having said this, Cantina 20 is not completely informal: “The owner wanted a contemporary canteen, with designs and an extensive menu of Mexican food, full of art, music where you can eat, drink, and have fun.” Cantina 20 possesses some relevant characteristics, having the flavors of a cantina but the allure of a high class establishment. “First, we wanted the best location possible in Miami.</p>

We share the space and have a great location because we have the Miami River and the Miami South channel in front of the restaurant. We have two floor levels, which are two different atmospheres. The top floor is the restaurant, everything is black and gold, and the lower floor is the launch, a much more open space. The colors contrast with white and silver.”</p>

<p>“In Cantina 20, we took the most representative culinary faire of Mexico and we try to use traditional recipes because it’s the taste we want people in Miami to experience.</p>



<p>We strive to demonstrate authentic Mexican food with added sophistication. We like to add a little extra to our dishes while maintaining the same traditional taste. Here, we plant our own corn, which you don’t see in Miami. Most people buy maseca (corn flour), which is already processed.”</p>



<p style="padding-bottom:var(--wp--preset--spacing--70)"><strong>The spacious eatery has become a social hot spot, especially on weekends:</strong> “That’s what we try to do here. If you dine at a conventional restaurant, people are sitting and eating, but lack ambience. But here, the restaurant greets you with a ten meter bar, which has a big selection of tequila and mescals. All of which invite you to drink. We have music, videos each night, and mariachis sing traditional Mexican music. Diners can stand, sit, sing, drink tequila and dance.”</p>

<p style="padding-top:var(--wp--preset--spacing--70)"><strong>We asked Chef Gomez what his favorite dishes where and if I were to ask him for an entrée highlight, a drink and a dessert, what would he recommend?</strong></p>



<p>“For starters, a margarita. We do them authentically Mexican. Then, we have the dobladitos, which are tacos made with meat, jalapeño sauce and some tuna toast. As a highlight, you could eat the traditional cochinita (which is a traditional Mexican slow-roasted pork dish from the Yucatán Península of Mayan origin); very important and one of the tastiest.</p>



<p style="padding-bottom:var(--wp--preset--spacing--70)">You can also eat a mole as a highlight, which has more than 25 ingredients and takes around two hours to create. For dessert, have a churro. They’re simple; yet, make for a great street dessert. We give churros a special touch of presentation, but the authentic taste stays.”</p>

<p style="padding-bottom:var(--wp--preset--spacing--70)">“We thought Miami was an “easy” place. It’s actually a very difficult place because we have a lot of competition. The best restaurants are all around Miami. But, it’s an easier market to get into. And, it’s not that it isn’t demanding, because it really is. But, it’s easier than Vegas or New York, which is where we want to go later. But, we wanted to start somewhere more Latino and hot.”</p>
